Simple Fall Kale Salad

I am on a mission to convert everyone into a kale lover! I know it’s the green that gets a little less love than all the others, but I think it’s so good! This salad is my go-to for lunch or a side with dinner. It’s so easy to make and you can keep it in the fridge (yes- even with the dressing on already) for the week! 

Ingredients: 
1 bag pre-washed kale 
2 TBS shredded parmesan cheese 
2 TBS olive oil 
1 lemon 
Chopped walnuts
Dried cranberries 
Salt + pepper to taste 

How to:

STEP 1: Add kale to a bowl with 1 TBS of the olive oil. Massage the kale with your hands so that the oil and lemon are distributed evenly. This softens the kale and makes it taste even better! I also take out any large stems at this point too. You don’t have to, but I prefer only the leafy part of the kale. 

STEP 2: For the dressing, take the juice of your lemon and the rest of the olive oil and pour into a cup. Add salt and pepper to taste and mix well. 

STEP 3: Pour dressing over kale and add in parmesan, cranberries and walnuts. I know I said 2 TBS of parm, but feel free to add as much or as little as you like. 

STEP 4: Toss + plate!

I love to add grilled chicken or shrimp on top for a really filling lunch. There are so many variations that you can do, especially for fall! A diced apple or  butternut squash would be delicious.
