Simple Fall Kale Salad

I am on a mission to convert everyone into a kale lover! I know it’s the green that gets a little less love than all the others, but I think it’s so good! This salad is my go-to for lunch or a side with dinner. It’s so easy to make and you can keep it in the fridge (yes- even with the dressing on already) for the week!

1 bag pre-washed kale
2 TBS shredded parmesan cheese
2 TBS olive oil
1 lemon
Chopped walnuts
Dried cranberries
Salt + pepper to taste

How to:

STEP 1: Add kale to a bowl with 1 TBS of the olive oil. Massage the kale with your hands so that the oil and lemon are distributed evenly. This softens the kale and makes it taste even better! I also take out any large stems at this point too. You don’t have to, but I prefer only the leafy part of the kale.

STEP 2: For the dressing, take the juice of your lemon and the rest of the olive oil and pour into a cup. Add salt and pepper to taste and mix well.

STEP 3: Pour dressing over kale and add in parmesan, cranberries and walnuts. I know I said 2 TBS of parm, but feel free to add as much or as little as you like.

STEP 4: Toss + plate!

I love to add grilled chicken or shrimp on top for a really filling lunch. There are so many variations that you can do, especially for fall! A diced apple or  butternut squash would be delicious.

Meet Steph!

I am a mama of three- two little girls and a sweet baby boy who just joined our family this past summer. I am a wife to my husband Chris and we recently moved from New York (super close to NYC) to SWFL! I’ve been sharing my thoughts on motherhood, outfits and recipes on Instagram for about four years. I decided to create this blog so there could be a place for all of my content to live – and for my audience to easily find things they saw over on Instagram! My hope is that you’ll find this blog a place of helpful information, positivity and fun ideas that enrich your life and bring you joy. You are welcome here!
